I don’t even like cabbage rolls but these are so good they are a regular in our dinner rotation! I adapted the recipe from my favorite recipe book – Practical Paleo. Please note that I normally double this recipe due to the excess of cabbage rolls. They reheat nicely.
– 1 head savoy cabbage, leaves carefully separated to remain in tact
-1 -1lb bag of frozen cauliflower, thawed
-sea salt and pepper to taste
-1 lb ground turkey
-1-2 cloves garlic-finely diced
-1 teaspoon dried rosemary
~5 Roma or Small Tomatoes
-Preheat oven to 350 degrees F.
-Steam the cabbage until soft enough to roll without splitting the leaves
-Chop the thawed cauliflower (I use my Vitamix) until about the size of rice
-In a large mixing bowl combine the ground turkey, cauliflower, garlic, onion rosemary and sea salt and pepper until well mixed
-Fill the end of the leafs approximately half full and roll it up like a burrito! Lay the cabbage rolls in a deep oven safe dish with the tucked side down.
-Chop up the tomatoes (I again use my Vitamix to get them small and keep the juice) and pour over the cabbage rolls.
-Place the entire dish in the oven and cover with foil or a lid. Bake for about 45 min or until the meat is cooked all the way through.
