This is a personal recipe of mine, my absolute favorite salad. Now that it’s summertime, it’s a great option for a healthy and filling lunch!
~1-2 cups of spinach
handful of sliced strawberries
handful of blueberries
1 Tbsp chia seeds
1 serving shrimp or grilled chicken
any available veggies – sliced carrots, chopped cucumber, chopped cabbage, whatever you like!
Dressing – 2 Tbsp Apple Cider Vinegar (with the mother) + 1 Tbsp Olive or Flax oil
Mix all ingredients together, top with the dressing and enjoy!
