Who says healthy eating has to be boring? It can (and SHOULD) include healthy carbs. Why not enjoy your sweet potatoes French Fry style? We eat them this way often around here!
Preheat the oven to 400 degrees.
Wash, dry and chop up the sweet potatoes into fry shapes.
Put on a cookie sheet and sprinkle with spices of your choice (I use cinnamon and salt)
Bake for ~12 minutes, flipping half way through. They are ready when slightly browned.
Eat and enjoy!
