I’ve been making this delicious soup in the crock pot and heating it up for lunch the past week. It can also be set up to cook in the morning and you will be welcomed home to a house smelling delicious and a hot meal waiting for you. It’s packed with the immune boosting properties of bone broth plus some added healthy vegetables and protein. Yummy!
Super Easy Basic Bone Broth:
I’ve been buying rotisserie chicken at the store and putting the carcass in the crock pot. Add a splash of garlic, a TBSP of Apple Cider Vinegar (with the mother!) and enough water to cover it all. You can add other spices if you desire. Cook on low for 2 days. Then remove the bones and strain the broth.
Creamy Lemony Kale Soup:
– bone broth from above
– chicken meat from the rotisserie chicken used above
– 1/2 cup olive oil
– 1 onion
– bunch of kale, ripped into small pieces
– 2 carrots, diced
– 2 lemons
Take 2 cups of the above bone broth in a high powered blender. Add in the onion and blend until liquified.
Add liquified mixture to the crock pot. Add chicken, olive oil, kale, carrots zest & juice from the lemons. Add the rest of the bone broth, any other desired vegetables or spices and cook the mixture in your crock pot for 8-10 hours.
