I’ve been playing with this recipe so there are a ton of options. However, it is delicious pretty much any which way. Whip up a loaf on Sunday for a portable protein and veggie fused snack to grab and go during the week!
1 pound ground beef or lamb
1 onion finely diced OR cauliflower finely shredded
1 zucchini, grated
Spices of your choice – I use a bit of parsley, basil and a big spoonful of allspice (for the kibbeh flavor).
Preheat the oven to 400. Line a rectangular bread pan with parchment paper.
Mix all of the above ingredients until well blended.
Put in the lined pan and cook for 40 minutes.
That’s it! Quick and easy and a healthy choice for a grab and go snack. Enjoy!
