File this under YUM! This is my favorite salad dressing ever. I found it in the book Practical Paleo by Dianne Sanfilippo and I was initially hesitant about the dill but it turned out delicious. It’s especially good over a salad containing lamb.
1 ripe avocado
1/4 cup grated cucumber
1 small garlic clove, grated
Juice of 1 lemon
2 Tblsp EVOO
Sea salt and black pepper to taste
1 tsp fresh dill, finely chopped
Combine all ingredients in a small food processor or with a hand blender.
That’s it. No really, that’s it! I use my Ninja Chopper – smallest container. It takes less than a minute to blend this into a delicious dressing. Remember – you absorb the vitamins and minerals in vegetables much better when you eat them with a healthy fat. Avocados fit this bill perfectly.
