In honor of Thanksgiving coming up today’s recipe of the week is a healthy quick and easy substitute for mashed potatoes.
1 12-oz bag frozen cauliflower
Pat of butter
1-3* cloves of garlic, minced
Microwave your frozen cauliflower until warm and soft.
Add heated cauliflower to your high powered blender. Process quickly to chop the cauliflower. Add butter, garlic and if desired a pinch of sea salt. Process on high until smooth and well combined. The texture should be that of mashed potatoes.
*If you are a garlic fan use 2-3, if you are not a garlic fan start with 1.
